Joe Rosolen (aka Param)
Chef Joe Rosolen has been a vegetarian / vegan for thirty years. He has taught vegetarian cooking for The Integral Yoga Institute, Naturally Yoga and various adult schools as well as privately. He has been cooking professionally for twelve years, with the specialty in vegan and vegetarian cooking.
Joe operated the take out deli at The Third Day Natural Foods Store, formerly in East Rutherford, New Jersey, for nine years.
In 2003, Joe began Two Brothers Catering, which provided vegan and vegetarians in New Jersey, New York, and Connecticut a way to make their special occasions complete with great food. Joe's interaction with his clients led him to see the need for a weekly food service to conviently provide high quality, tasty food to busy vegetarians and vegans. Out of this grew the idea for the Online Vegetarian Deli.
Joe's interest for vegetarianism grew out of compassion, health and yoga studies. He has been a student of yoga for 25 years and a teacher for eight years. He has cooked for various yoga retreats as well as for members of the Jain community (strict vegan).
